烤肉咱贵州人吃得多

可说起“木姜子烤牛肉”

大家可能还有点“抓脑壳

是个什么东东呢?

不过微兔想了一下

木姜子+烤牛肉

再配点折耳根辣椒水

那味道肯定是扛扛滴~

为什么要说“木姜子烤牛肉”呢?

那是因为就在今天,以这道菜为代表的一票贵州特色美食亮相“开放的中国:多彩贵州·风行天下”贵州省全球推介活动,地点是:中华人民共和国外交部。


各国驻华使节、国际组织负责人,

部分世界500强企业及中外媒体,

数百人都齐聚外交部“蓝厅”


(外交部蓝厅:就是大家经常在电视上看到的外交部发言人答记者问的地方,可以说从这里传播出去的都是代表中国的声音。)

推介会后的冷餐会上,由十六道主菜、六款甜品、十种酒水、六种水果组成的“贵州美食天团”将集体亮相。

在亮出完整菜单之前,微兔先要说说这次冷餐会的门道。这里面既有传统的黔菜,又有创新型菜品。关于肉类的选择、菜品创新,可是大有文章。

这些颇具贵州气息的器皿会装满贵州美食展现在世界眼前


据介绍,考虑到外宾中有忌食猪肉的,西方人也有喜食牛肉羊肉鸡肉或者鱼肉的习惯,为此大厨创新了许多菜。比如说“木姜子烤牛肉”这道菜,选用的就是土黄牛,但是木姜子却是新鲜的木姜子,经过腌制之后,烤出来既有清香的木姜子味道,牛肉口感的回味也非常好吃。


除此而外,酸汤鱼,怎么才能在冷餐会上吃出新意,请看下图。


白色小酒杯配上酸汤鱼,高大上即视感有木有!这么个创新法可不是只图一个噱头,由于是冷餐会,不用摆盘,甚至不用筷子和刀叉,只用牙签,这次亮相的贵州美食也作了特别的设计。比如,酸汤鱼将去掉鱼刺以后盛放在透明的酒杯里,方便客人品尝。


就连吃水果的牙签儿经过一番设计也都是满满的贵州味道


接下来,我们再来看一下各国来宾都钟爱的蔬菜沙拉。由于贵州食材历来绿色环保有特色,因此怎么让外宾在冷餐会中对舌尖上的贵州留下记忆,这时在保存着食材原汁原味的沙拉上就可以做做文章了。

贵州特色佐料——木姜子

这道沙拉可是添加了来自雷山的鱼蓼和雷山的木姜子,加上沙拉原本的口感,一定会为他们留下足足的“贵州味道”。

刺梨果脯

加上遵义鸡蛋糕、牛打滚、刺梨果脯,这些你我儿时就熟悉的味道,这次都将入围“贵州美食天团”。

1、蔬菜沙拉

 2、茅台鸡

Moutai Chicken

“茅台鸡”是精选贵州茅台镇原生态放养的鸡创作出的一道冷菜。

Moutai chicken is a cold dish made of free-ranged chicken raised in Moutain county.

3、禹门酱鸭

Yu’men Duck Seasoned with Special Sauce

    精选当地土鸭,传统工艺相结合,采用几十种名贵天然配料和中药材卤制而成,食品营养丰富,气味芳香,具有肉质鲜嫩,淳香爽口之特点。

Local selected ducks are cooked with traditional method, using dozens of precious natural seasonings and medical herbs, all of which contribute to its nutrition and fragrance. The meat is fresh, tender and tasty.

4、苗族酸汤鱼

Sour Soup Fish

酸汤鱼是贵州“黔系”菜肴的代表作之一。苗族古时因深居大山深沟之中,缺少食盐且环境潮湿,冬季阴冷,养成了喜酸嗜辣的饮食传统。酸汤以健胃开脾为最大特色。

Sour soup fish is one of the representative dishes of Guizhou. In the past, the Miao people lived in the mountains, where lacked salt and contained high humidity. Therefore, in cold winters they prefer to eat sour and spicy food.

原料:稻田鱼 酸汤  味型:酸辣

5、沙滩醋羊肉

Braised Mutton in Sour Sauce

醋羊肉是遵义沙滩的传统风味菜。用麻糖、麸醋和大干辣椒制成的“黄酱”烹制而成,所以又叫“黄酱羊肉”。微甜带酸,兼有轻微辣味,最大限度保持了羊肉特有的鲜味。

Braised mutton in sour sauce or “mutton with yellow soybean paste” is a traditional specialty in Zunyi. It is cooked with “yellow soybean paste” made of barley sugar, bran vinegar and dried chili. It tastes slightly sweet, sour and spicy. The unique flavor of the mutton is retained as much as possible.

6、木姜子烤牛肉

    Roast Beef with Litsea

贵州土生黄牛生长在生态环境中,它们吃得是新鲜嫩草,喝的是矿泉水,吸的是优质空气,以其为材质配以贵州优质天然香料烧烤而出,色、香、味俱全。

Cattle in Guizhou are fed with green grass and clear water, and breathe fresh air. The perfect match of selected spices and quality beef becomes a delicacy when roasted.

7、苗王鱼

Miao Wang Fish

苗王鱼源于一个古老的民族传说。苗族先民中有一位著名部落首领每逢出征,必吃此佳肴,以图吉利,因其百战百胜,护卫族民,后世称此菜为苗王鱼,以纪念其功绩。

As the old Miao legend goes, there was once a Miao Wang (a Miao tribal leader) who liked to invite good luck by having this dish before going to battles. This dish was later called Miao Wang Fish to remember his victories and contributions.

原料:稻田鱼、辣椒、苗寨天然香草    味型:鲜辣

 8、宫保鸡丁

Kung Pao Chicken Dices

宫保鸡丁,是一道闻名中外的特色传统名菜。该菜式的起源于贵州菜的胡辣子鸡丁。因贵州人丁宝桢(曾封太子太保,人称丁宫保)改良发扬,引入京城而得名,此菜鲜嫩、微辣、脆香具备。

Kung Pao Chicken Dices, the world-renowned Chinese dish tastes tender, slightly spicy and crispy. The dish originated from the “Stir-fried Chicken Dice with Dried Red Chili” of Guizhou. Later this dish was improved and named after Ding Baozhen, who was born in Guizhou and once worked as the tutor of the Prince in Beijing, thus also called Ding Kungpao.

9、赤水粉蒸牛肉

Chishui Steamed Beef with Rice Flour Dressing

粉蒸牛肉主要烹饪工艺是蒸。菜品鲜嫩醇香、麻辣适口。用青菜叶垫在笼底,倒入拌好的牛肉,用大火蒸熟;调以葱花油,原笼上桌即成。

The cooking method of this dish is steaming. It tastes tender, mellow and moderately spicy and hot. Green vegetables are placed on the bottom of the steamer and sauced beef on top. After being steamed under a high temperature, the dish is served with  green shallot oil.

原料:牛肉、米粉  味型:咸鲜微辣

10、虾红椒艳

Chili Shrimps

糟辣椒是贵州独有的美食调味品,其色泽鲜红,香浓辣鲜,既辣又酸,特有的香、辣、鲜、酸、嫩、咸、脆的独特风味。

Pickled chili sauce is a special seasoning in Guizhou. With a bright red color and inviting fragrance, the dish tastes spicy, delicate, sour, tender, salty and crispy

11、脆烤黑山羊

Roasted Mutton Chop

脆烤黑山羊肉是由羊排、孜然,配以各种佐料之城。羊肉肉质细嫩,易消化,蛋白质含量高,具有理气开胃,驱风止痛的功效。

Roasted Mutton Chop is cooked with cumin and various other seasonings. The mutton is tender, easily digestible and rich in protein. The dish is appetizing and has analgesic effects.

12、银杏小米渣

Steamed Sticky Millet with Gingkoes

选用贵州高原糯小米为原料,点缀金果银杏,采用传统蒸熟加工而成,其口感甜爽细腻,糯香可口,口感绵甜,风味独特,色彩鲜黄透亮,颗粒圆润饱满。

This dish is made with selected steamed sticky millet and gingkoes. The dish is sweet and soft. Its unique flavor and bright yellow color are extremely impressive.

13、可口黄粑

Huangba Cakes

可口黄粑采用优质食材,经传统手工艺精制而成,呈黄色,故名黄耙。味甜,质软。可烘烤、油炸或汽蒸,食用方便。

Using selected ingredients and processed with traditional methods, these cakes are soft with brown color and tastes sweet. They can be baked, fried or steamed.

14、黑麦岩脚面

Yanjiao Rye Noodles

“岩脚面”是岩脚古镇历史悠久的特产,生产于溶洞众多、矿泉水清澈甘甜、矿物质和微量元素丰富的喀斯特环境中,又创新选用地产黑麦灰面,更显“香、滑、劲、脆”。

“Yanjiao noodles” are a specialty with a long history in Yanjiao Town. The rye grows in a karst area with clear water rich in minerals and microelements, making the rye noodles more fragrant, silky and chewy.

15、天然蕨粑

Natural Fern Root Cakes

选用产于铜仁地区海拨一千米以上深山老林的蕨苔,纯野生天然食品,手工精制而成,是一款典型的以山野植物为原料制作而成的小吃菜品。

The cake is made from natural fern roots collected from the mountains more than 1,000 meters above sea level in Tongren. The chewy taste makes it a classic snack.

16、姐妹彩色糯米饭

Naturally-Colored Sticky Rice

糯米饭是中国传统美食,而多种色彩的糯米饭却十分罕见,苗族同胞发挥想象力,用多种色彩原料糅合而成,在重大节日之际以佳肴上桌。

Sticky rice is a traditional Chinese delicacy. The Miao people color their sticky rice with natural plants, making it one of the festive dishes.

甜点DESSERT

1、遵义鸡蛋糕

Zunyi Cakes

遵义鸡蛋糕具有甜,咸两种口味,产自历史名城遵义,与豆花面、羊肉粉并为红军长征经过贵州时打牙祭的三大美食。具有柔软、香甜、色泽深黄、入口蛋香、回味悠长的特点。

These cakes from Zunyi are sweet or salty. It was one of the favorite delicacies for the Red Army during the Long March. The golden cakes taste soft and delicious.

2、荞麦鸡蛋糕

Buckwheat Cakes

荞麦鸡蛋糕以贵州本土特色的优质荞麦粉为基础原料,质地细软滑溜,因此做出来的蛋糕口感松软,具有独特的小麦香味。

With local Guizhou quality buckwheat as its basic ingredient, the buckwheat cake is silky in texture.

3、荞麦焦糖小饼

Caramel Buckwheat Cookies

贵州盛产荞麦,素有“荞乡”之称。苦荞含有19种氨基酸,其中有8种为人体必需,采用地产原料与西式烘焙方法而成的甜点,有独特风味。

Guizhou is abounds in buckwheat. Tartary buckwheat contains 19 amino acids, of which 8 are necessary for good health. Made with local materials and western baking methods, this dessert has a special flavor.

4、牛打滚

Sticky Rice Balls in Soy Bean Powder

黔中地区的传统汉族小吃,因其做法中最后一道工序是在装有黄豆面的盘中滚一遍,与牛在田间打滚有形似之处,故取其名。

This is a traditional snack in central Guizhou. Before serving, the rice balls are rolled in soy bean powder.

5、精致米糕

Steamed Rice Cakes

贵州米糕拥有很悠久的历史,是中国汉族传统小吃食之一。其食材选用简单。但创作工艺复杂,需经过选、洗、煮、磨、蒸、冷,配、型等8道工艺,缺一不可,入口酥松甜美。

Guizhou Steamed Rice Cakes have been one of the traditional snacks. Featuring simple ingredients but complicated cooking process (selection, washing, boiling, milling, steaming, cooling, matching and shaping), they are crispy and tasty.

1、茅台酒

Moutai

独产于中国贵州省遵义市仁怀市茅台镇,是中国的传统特产酒。与苏格兰威士忌、法国科涅克白兰地齐名,为世界三大蒸馏名酒,是大曲酱香型白酒的鼻祖,更是中国的国酒。至今已有800多年的历史。

Exclusively from Moutai Town, Renhuai, Zunyi in Guizhou, the spirit is a world-renowned distilled liquor as famous as scotch whisky and French Cognac brandy. Being crowned as the national liquor of China, its history can be dated back to 800 years ago.

 

2、茅台露黛尼干红葡萄酒

贵州茅台集团出品,产地:法国波尔多。

Under Kweichou Moutai Group and made in Bordeaux of France. 

3、茅台啤酒

Moutai Beer

“茅台”牌系列啤酒是由优级澳大利亚麦芽和优级进口酒花浸膏、质地良好的优质糯米和具有喀斯特地貌的深山泉水、独特的配方和酿制工艺精制而成。风味纯正爽口、谐调柔和。  

It is made of high-quality Australian malt and imported hop extracts, delicate glutinous rice and spring water from Karst mountains, is refined with unique formula and brewing process.

7、苦荞茶

Fagopyrum Tataricum Tea 

学名鞑靼荞麦。营养价值高,特别是生物类黄酮的含量是荞麦的13.5倍。,每日饮用对高血脂、高血压患者有辅助治疗作用。

Known as tartary buckwheat or bitter buckwheat, it is high in nutrition. It contains 13.5 times of bioflavonoids than buckwheat. Stir-fried tartary buckwheat can be used as tea for daily drinking, which is beneficial for the treatment of hyperlipidemia and hypertension.

 8、都匀毛尖茶

Duyun Maojian Tea

它是中国十大名茶之一。1956年,由毛泽东亲笔命名,又名“白毛尖”、“细毛尖”,是贵州三大名茶之一。外形条索紧结纤细卷曲,色绿翠,香清高,味鲜浓,叶底嫩绿匀整明亮。

As one of the top 10 teas in China and one of the three famous teas in Guizhou, Dunyun Maojian tea was named by Mao Zedong in 1956 and is also known as “white Maojian tea”, “thin Maojian tea”, because of its thin, curly and tight shape with fuzz and light green color. It also has a strong fragrance and taste.

 

9、绿宝石高原绿茶

Premium Emerald Green Tea

产于“高海波、低纬度、寡日照”的贵州高原,环境生态良好。所选茶叶叶肉厚、持嫩性久、叶张开度小,内含物丰富且栗香浓郁、滋味厚重、持久耐泡。

Originating from the Guizhou plateau with high altitude, low latitude, low-sunshine and favorable ecosystems, the selected leaves feature thick mesophyll, tenderness, small openings, rich nutrients, strong fragrance and lasting aftertaste.

 

10、普安红茶

Pu’an Black Tea

产于高山生态种茶的绝佳宝地贵州省普安县。外形肥硕,芽毫显露,汤色红艳,香气高锐,带自然花香,滋味浓醇甘甜,素有“黔茶第一春”的美誉。

Pu’an black tea is grown in the high mountainous eco-system of Pu’an county in Guizhou province, which is a treasured place for tea plantation. The tea leaves are big and thick. In hot water, the bud hairs are visible, and the tea is brilliant red, with a strong fragrance of fresh flowers and a thick and sweet flavor. Pu’an black tea uses only the tender shoots in the early spring.
