The presence of Vibrio vulnificus bacteria is not a result of pollution, so although oysters should always be obtained from reputable sources, eating oysters from “clean” waters or in restaurants with high turnover does not provide protection. Eating raw oysters with hot sauce or while drinking alcohol does not kill the bacteria, either. Only heat can destroy the bacteria.


创伤弧菌的存在并非源于污染,因此,虽然说生蚝常常应该来自可靠的来源,但食用来自“干净”水体或高周转率餐馆的生蚝并不能提供保障。吃生蚝蘸辣椒酱或喝酒都不能杀菌,只有加热才能杀菌。



Since thoroughly cooking oysters will destroy the bacteria, oysters can continue to be enjoyed in many cooked preparations.


由于生蚝要全熟才能杀灭细菌,有很多种烹调方式能享受到美味的生蚝。


Cooking at Home

居家烹调


When you purchase oysters the shells should be closed. Throw away any oysters with shells already opened.

应购买壳紧闭的生蚝,如果壳打开了就应舍弃。


In the shell

带壳煮


After the shells open, boil live oysters for another 3-5 minutes.

打开壳后,再水煮活生蚝3-5分钟。

Tips 小提示

Use small pots to boil or steam oysters. Do not cook too many oysters in the same pot because the ones in the middle may not get fully cooked. Discard any oysters that do not open during cooking.

使用小锅水煮或蒸生蚝。不要在同一个锅里烹煮过多的生蚝,因为中间的生蚝可能未完全煮熟。扔掉那些在烹煮过程中不开壳的生蚝。


In a steamer: Add oysters to water that is already steaming and cook live oysters for another 4-9 minutes.

蒸煮:把生蚝加进已出蒸汽的水中,持续蒸4-9分钟。
